Sunday Munchday: HomeMade Granola

I’m a granola lover and lately I’m not finding the crunchy hearty granolas that I like. Some taste too sweet or have weird unatural flavors or have too many or too less ingredients.  When I do find one I like, its costs an arm and a leg. Which is what brought me to the decision to try making my own. I’m very happy I did because I found I make my own favorite granola! I don’t think I will ever have the heart to fall into store bought granola again. Yippee! Below is my recipe. Feel free to add or change whatever you see fit in order to make it your own favorite granola.

I choose to use all Organic ingredients- which I highly suggest :)

4 cups rolled oats

1 cup sliced almonds

1/2 cup whole almonds

1/2 cup halved pecans

3/4 cups organic honey

1/3 cup olive oil

1 teaspoon vanilla extract

1/2 cup raisins

Cinnamon to taste -optional


Preheat oven to 300 degrees. Mix the honey, oil, vanilla together. Put the raisins in a separate bowl of water and let sit for a few minutes. Mix the oats and nuts in a large bowl, pour the honey mixture over it, mix well. Spread the mixture onto a cookie sheet. Let raisins sit to the side. Bake for 10 minutes then stir granola, sprinkle raisins over the top, sprinkle cinnamon if desired. Bake for another 10 mintues. If you like your granola extra crunchy bake for an addtional 5 minutes. Transfer granola to wood cutting boards or a cold-nonstick baking sheet to let cool. If you don’t transfer the granola its going to stick to your baking sheet really bad! Dont make the mistake I first made and bake it on wax paper and let it cool on wax paper- the paper will stick to your granola and you’ll waste most of it :(

Note: The granola gets crunchy as it cools so dont worry about that.

Note to Nora: If you don’t eat nuts subtitute with any combination of dried fruits (cranberries, golden raisins, coconut), you can use rice crispies, cereals, flax seeds, mini chocolate chips, anything you want!

Once you try this stuff you are gonna be hooked! Enjoy!
